Chewy Chocolate Chip Granola Bars

Finding healthy breakfast meals that are quick and easy can be tough.  How about finding a healthy snack that you can eat during the work day when you’re at the office or can’t take a full lunch break.  I like to go for these healthy no bake chewy chocolate chip granola bars.

Now any time you make homemade snacks you know that they’re going to instantly be healthier.  It may seem more convenient to grab a granola bar from the gas station or grocery store, but they’re usually packed with sugars and other ingredients that in the long run, aren’t that healthy for you.

This is why I’m such a big fan of these no bake chewy chocolate chip granola bars.  First of all, they’re incredibly simple to make.  All you need is a little bit of time, a bowl or two, and a jelly roll pan.  The ingredients are simple and healthy – most people will have all the ingredients in their home already.

Another reason I love making my own granola bars is that I can add whatever I want into them.  Yes, this recipe calls for chocolate chips but that doesn’t mean you have to stop with that.  Try throwing in raisins, coconut, craisins, nuts, flax seed, or anything really!

These last in an airtight container for around seven days.  So you can have a healthy snack or quick breakfast for every day of the week.  Give these no bake chewy chocolate chip granola bars a try today!

 

Ingredients

  • 1/4 cup butter
  • 1/4 cup honey
  • 1/3 cup packed brown sugar
  • 2 cups quick-cooking oats not rolled oats
  • 1 cup crispy rice cereal
  • 1/2 teaspoon vanilla
  • 2 tablespoons mini chocolate chips

Instructions

  1. Start by taking out a large bowl and stirring the oats and rice cereal together.  Set that aside.  Now in a small pot – melt the butter, honey, and brown sugar together over a medium-high heat until that comes to a bubble.  Reduce the heat and cook that mixture for 2 minutes.  Pour in the vanilla and stir.  Pour that mixture over the dry ingredients from before and mix it well so all the ingredients are covered and moist.

  2. In a small jelly roll pan (a 12x8x1 pan), lightly grease it, then pour in the mixture.  Press it out to be about 3/4 inch of thickness.  (Tip:  If your pan isn’t small enough to do that, pack the mixture into one side of the pan.  You really want to press them good so they stick together.)  Sprinkle the mini chocolate chips and press down lightly.

  3. Let the granola mixture cool down on your counter top at room temperature for two hours or until the chocolate chips are settled before you cut into the bars.  Wrap them in plastic wrap or parchment paper and store them at room temperature.
