Ingredients
Grilled Taco Chicken
- 1 pound Boneless, skinless chicken breasts or thighs
- 2 tablespoons taco seasoning
- 2 cloves garlic minced
- 1 tablespoon olive oil
Assemble The Tacos
- 8 leaves Romaine Lettuce rinsed
- 1 avocado diced
- 1 tomato diced
- 1/4 cup onion diced
Cilantro Sauce
- 1/2 cup loosely packed cilantro
- 1/2 cup Greek Yogurt or sour-cream or mayo
- 2 tablespoons olive oil
- 1 jalapeno optional
- 1 clove garlic minced
- Juice of 1/2 lime
- Pinch of salt
Instructions
To Cook The Chicken

Grab a large bowl or a ziplock bag and throw in the chicken, garlic, olive oil, and spices.
- Place that in the fridge for 15 to 30 minutes to marinate or leave it for up to 24 hours.

Remove the chicken from the marinade and place it on a grill or a pan that’s on medium-high heat.
- Let the chicken cook until it’s not pink in the middle (about 9 to 10 minutes per side)
To Make Cilantro Sauce

Blend all the ingredients in a food processor for 1 minute or until creamy.
To Assemble

Stuff the lettuce wraps with chicken, tomatoes, onion, and avocado. Finish them off by drizzling the cilantro sauce on top or using your favorite taco sauce.
