- 3 cups no sugar added coconut
- 4 tablespoons coconut oil
- 1/4 cup vanilla sugar free syrup
- 1/2 cup coconut cream
- 1 cup sugar-free chocolate chips
Grab your mixer bowl and combine the coconut, coconut oil, sugar free syrup, and the coconut cream.
Put the mixer speed setting on medium and mix it for 3 minutes until all the ingredients are well combined.
Get a medium cookie spoon or a tablespoon. Scoop the mixture you just made onto a sheet pan that’s lined with parchment paper or a non stick silicone mat.
Put the coconut bites into the fridge and let them cool and set for 15 minutes.
In the microwave or a double boiler, melt your chocolate.
Put the chocolate into a piping bag or a ziplock bag. Cut the tip off the bag, drizzle and decorate the coconut bites.
Put the coconut back into the fridge for another 15 minutes so the chocolate drizzle can set.
