No Bake Peanut Butter Cookie Dough Bars

These no bake peanut butter cookie dough bars are a delicious recipe for a simple dessert. This recipe will satisfy anybody with a sweet tooth!

I just love to make this recipe for no bake peanut butter cookie dough bars.  That’s because they allow me to eat edible cookie dough and it’s topped with peanut butter.  Seriously,  it’s got everything I want to eat when I have a sweet tooth.

The cookie dough is not going to get me sick, and that’s because it doesn’t have any eggs in it.  When you add in eggs to make cookie dough, and you eat it raw, you are putting yourself at risk of getting salmonella.  Who wants to get sick when eating cookie dough…I know I don’t!

Now add in the peanut butter layer that goes on top.  That perfectly creamy peanut butter texture…ughhh my mouth is watering just thinking of it!

Making these no bake peanut butter cookie dough bars won’t take long.  The prep time comes in around 15 minutes and the “cook” time is 15 minutes.  So the total time from start to finish will come in around 30 minutes.  Not too bad!

Gives these no bake peanut butter cookie dough bars a try for your next no bake dessert.  They’re super yummy and crazy simple to make!

Ingredients

Cookie Dough Layer

  • 1/2 cup butter softened
  • 3/4 cup brown sugar tightly packed
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 14 oz. sweetened condensed milk
  • 2 cups mini chocolate chips

Peanut Butter Layer

  • 1 cup smooth peanut butter
  • 1/2 cup powdered sugar

Chocolate Layer

  • 12 ounces milk chocolate chips
  • 1/2 cup heavy cream optional

Instructions

  1. Grab a 9×9 baking pan and spray it with nonstick cooking spray.  Line it with parchment paper after you spray it.
  2. Using a hand mixer to make the cookie dough layer, cream together butter and brown sugar in a mixing bowl.  Mix in the salt and vanilla next.  Then you can slowly begin to mix in the flour and sweetened condensed milk.   Alternate between the two while you mix it them.  Stir in the mini chocolate chips and then press the dough into the baking pan you prepared earlier.
  3. Now to make the peanut butter layer, you’re going to begin by creaming together peanut butter and powdered sugar with a hand mixer in a mixing bowl.  Spread the peanut butter mixture over the cookie dough layer gently.
  4. To make the chocolate layer softer, pour in some heavy cream (it’s optional).  You can microwave for 15 seconds at a time, stirring in between, until your chocolate mixture is smooth and melted.  Pour it over the peanut butter layer immediately and smooth it out evenly with a spatula.
  5. Before you slice it up and serve it.  Let it sit in the refrigerator for 4 hours.

Notes

If you have concerns about consuming raw flour, you can toast the flour prior to using it in this recipe.  To do this, you can place the flour in a skillet over medium heat and toast it for 3 to 5 minutes.  You can now use this toasted flour in the recipe as directed.
