These s’mores cookie cups are bite sized sweet treats. They are super easy to make and all it takes is a little bit of time. To get all the ingredients prepped, it’ll take around 10 minutes – not to bad actually!
For the actual cook time, it comes in at 8 minutes. So the total cooking time is 18 minutes…which is totally acceptable when it comes down to making this super gooey and sweet s’mores treat.

Ingredients
- 1 cup graham cracker crumbs
- 1 1/4 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt (use 1/2 teaspoon if using unsalted butter)
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 1/3 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 12 large marshmallows, cut in half
- 2 Hershey’s (1.55 oz each) chocolate bars
Instructions

Get your oven preheated to 350 degrees. Then grab a mini muffin pan and spray it with cooking spray.

Combine graham cracker crumbs, salt, baking soda, and flour in a small mixing bowl. Stir it together with a whisk – then set it aside.

With a handheld electric mixer – blend the butter, sugar, and brown sugar in a large bowl until its combined and creamy.

Now add in the vanilla extract and egg – mix it together well.

Grab the bowl of dry ingredients and dump in the mixture. Mix it together on low speed until it’s combined. The dough in its current form will be crumbly.

Begin to scoop the dough into the mini muffin tins. Fill them up fully and press down lightly so that the dough is perfectly flat and even on top. You’ll have the exact amount of dough to fill up all 24 mini muffin tins.

Bake them for 8 minutes. Don’t worry though – they will look like they’re not done…but they’ll be fine!

As soon as you’re done baking, take a teaspoon and immediately press it into the dough. You’ll want to make an indentation so the marshmallow can sit in it.
- Place a half of marshmallow into each of the muffin cup indentations. Put the sticky side of the marshmallow down.

Let it cool down for 20 minutes.

Place a square of chocolate on top of each marshmallow.

Turn your oven broiler to high. Place the muffin pan under the broiler for 1 -2 minutes. This will toast the marshmallow very fast – so please watch carefully!

Let the muffin tins cool for about 10 minutes and then eat right away if you want a warm and gooey s’more. If you prefer to eat them later – just let them cool completely.
